The word Oolong means "black dragon" in Chinese. It is a semi-oxidized tea. Oxidation is stopped by moderately heating the tea leaves, in order to deactivate the enzymes, without destroying the flavor of the tea.
Oolong teas can easily withstand several infusions. These Oolongs can offer a very wide range of flavors depending on their oxidation: creamy and buttery flavors like Dong Ding from Taiwan, floral flavors like Tie Guan Yin or chocolate flavors like Da Hong Pao.
