Rooibos (red bush) grows in South Africa and is a plant, more precisely a shrub, which belongs to the legume family. There are two varieties of Rooibos: the red one (which we are used to eating) and the green one. Unlike the classic Rooibos, the leaves of the green Rooibos are not oxidized. They are simply dried in the sun after harvesting. Green Rooibos offers a palette of more vegetal and fruity notes, while keeping the typical vanilla nuances of classic Rooibos. Rooibos is a traditional drink containing calming tannin, valuable proteins, calcium but no theine. Its slightly sweet flavor makes it an excellent base for flavored blends.
Honeybush is another South African plant that grows wild in the Cape region. This tea has a delicate honey taste and is still caffeine free.
