SALMON GRAVLAX WITH CHRISTMAS TEA RECIPE
Ingredients (for 4 people)
400 g fresh salmon with skin (without bones)
2 tablespoons of coarse salt
2 tablespoons of cane sugar
1 sprig of dill
1 tablespoon of Christmas Tea
1 teaspoon of Lapsang Souchong
1 tablespoon of vodka
Mix tea, sugar, salt, dill and pink berries.
Add the vodka and mix.
Take 1/3 of the mixture and line the bottom of a deep dish with it.
Place the salmon skin side down in the dish and cover with the remaining mixture.
Film and leave in the fridge for 48 hours.
Scrape the salmon, rinse it under cold water and dry it with paper towels.
Cut thin slices with a sharp knife and serve on bread or blinis.
