Tie Guan Yin is one of the best Chinese teas. It is an Oolong from the Fujian province.
This tea first develops a pleasant roasted-sweet aroma when the leaves are opened. The taste is light and flavorful, with well-balanced roasted aromatic notes and refreshing acidity. Fine floral notes are complemented by aromatic notes of orange peel and licorice. This tea pairs well with all kinds of dishes and desserts. It is also worth brewing it briefly several times.
