MATCHA MILK TEA

Mix 3g of Matcha Tea, 3g of brown sugar and 20ml of water and whisk vigorously. Set aside. Put 3 tablespoons of cooked Tapioca pearls at the bottom of a large glass of about 4dl capacity (click here for pearl cooking). Add 4 large ice cubes. Pour oat milk up to 3/4 of the glass and pour matcha mixture on top to dissolve into a cloud. We recommend the oat milk because it brings a cereal note that goes perfectly with the matcha. However, you can replace it with whole milk.

SUMMER PEARL

Brew 4g of cold Happy Pie tea and 1g of Swiss Mountain Thyme in 300ml of water at 80°C for 10 minutes. Leave to cool. Put 3 tablespoons of cooked Tapioca pearls at the bottom of a large glass of about 4dl capacity. Add 4 large ice cubes. Then add the infused tea mixture. Add a touch of elderberry syrup to sweeten to taste.

LEGEND MILK TEA

Infuse 3g of English Breakfast and 2g of Tibetan Legend in 300ml of water at 80° for 10mn. Let it cool down. Put 3 tablespoons of cooked Tapioca pearls at the bottom of a large glass of about 4dl capacity (click here for pearl cooking). Add 4 large ice cubes. Then add the brewed tea mixture up to 3/4 of the glass. And finish filling the glass with whole milk. If you want to sweeten, prepare a syrup with one part brown sugar and one part hot water and stir until the sugar is dissolved.
