Notre Pu’erh biologique provient de la province du Yunnan et est appelé shou cha, ce qui signifie que son processus de maturation a duré environ 2 mois.
Le thé pu’erh cuit (shou cha) est un thé post fermenté. La fermentation est accélérée grâce à l’humidification des feuilles de thé et sous l’action combinée de champignons microscopiques, de levures et de bactéries. On les place à l’abri, dans une pièce à chaleur et humidité constantes et on les brasse régulièrement.
Cette étape dure entre 45 jours et 2 mois afin d’obtenir un thé d’une grande richesse aromatique.
Le Pu’Erh traditionnel Sheng cha a une période de maturité plus longue. Notre lot actuel vient de 2021 et a un goût riche et terreux.
